The effervescence is persistent and abundant, making it clear this is not a still cider but a joyous, fully sparkling expression of one.<br>The nose is rustic and inviting. The primary aromatic signature is a rich, evocative note of fermented apple mash, which speaks to the high sugar and aromatic content of the classic eating apples used (McIntosh, Cortland, and Lobo). This foundational fruitiness is elegantly overlaid with subtle farm-wood scents, suggesting either a gentle aging process, the influence of old-vine tannins, or a natural, slightly wild fermentation that adds complexity and earthiness. Crucially, the minimal alcohol on the nose keeps the focus entirely on the delicate apple aromatics, hinting at a lower-proof, highly refreshing experience.<br>On the palate, the cider is dry and immensely approachable. The brightness of the high acidity (a characteristic of the Cortland and McIntosh blend) cuts through the rich, fermented apple flavors, resulting in a crisp, clean finish.
