Artisanal production, from hand-picked apples to hand-bottled spirits. Deep, rich flavours akin to bourbons (Lobo), whiskies (Mac) and traditional brandy (Cortland). A real labour of love. Production limited to apples from our 800 century-old trees on the Quebec\/Vermont border. For now, available only at the farm<\/em>,<\/p>\n

Most brandies are made with a mix of apples, a distilled blend of ciders that didn\u2019t get bottled. Cast offs, really. Not here. <\/em><\/p>\n

<\/p>\n

As we distilled each variety of apple cider, we discovered each has a unique character. Now we bring those characters to life in the world\u2019s first set of single-varietal brandies.<\/em><\/p>\n

La plupart des eaux-de-vie sont fabriqu\u00e9es \u00e0 partir d’un m\u00e9lange de pommes, souvent par distillation de cidres qui n’ont pas \u00e9t\u00e9 embouteill\u00e9s. Des rebuts, en somme. Pas ici.<\/p>\n

En distillant s\u00e9par\u00e9ment chaque vari\u00e9t\u00e9 de cidre de pomme, nous avons d\u00e9couvert que chacune poss\u00e8de un caract\u00e8re unique. Nous donnons maintenant vie \u00e0 ces caract\u00e8res dans la premiere collection d’eaux-de-vie monovari\u00e9tales au monde.<\/p>\n

DISTILLATION UNIQUE – SINGLE DISTILLATION<\/em><\/h2>\n

Eau-de-vie for Pommados is the result of a single distillation in a small (200 l) traditional pot still, hand made in Canada.<\/em><\/p>\n

<\/p>\n

The result is retention of most of the fruit-derived esters for a more complex, full-spectrum flavour<\/em><\/p>\n

<\/p>\n

L’eau-de-vie Pommados est le r\u00e9sultat d’une seule distillation dans un petit alambic traditionnel de 200 l, fabriqu\u00e9 \u00e0 la main au Canada.<\/p>\n

<\/p>\n

Le r\u00e9sultat est la pr\u00e9servation de la majorit\u00e9 des esters issus du fruit, pour une saveur plus complexe, riche et compl\u00e8te.<\/p>\n
